Ingredients
- Assorted in season fruit Eg. Bananas, grapes, strawberries, blueberries, kiwifruit, apple, oranges, pear, melon
- 1/2 cup of coconut flakes
- 2/3 cup of runny honey
- 1 tsp cinnamon
- 1/2 lemon
- Wooden skewers
Method
- Preheat oven to 200°C
- Spread coconut onto a baking tray and carefully toast in the oven, for 5 min.
- Heat the honey, cinnamon and juice from half a lemon in a saucepan or microwave until hot and melted, but not boiling.
- Cut up fruit into pieces that will thread easily onto skewers
- Thread a mixture of different fruits onto each skewer
- Place on a large plate and brush kebabs with the honey mixture (or drizzle)
- Roll kebabs in the coconut to coat them
- Best eaten straight away
