Ingredients

  • 2 cups Flour
  • 2 tsp Baking powder
  • 1/2 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • Pinch of Cloves
  • 1 tsp Vanilla Essence
  • 1/2 cup Canola oil
  • 2 Eggs
  • 1 Apple
  • 1 Zucchini
  • Squeeze of Lemon juice

Method

  1.  Preheat oven to 180°C. Line muffin tins with muffin cases and spray each case with cooking spray.
  2. In a large bowl sift together flour, baking powder, brown sugar, cinnamon, nutmeg and cloves. Set this aside.
  3. Cut the apple and remove the core. Grate both the apple and zucchini. Place in another bowl and add a squeeze of lemon to stop it turning brown
  4. In another bowl whisk together the eggs, vanilla and oil. Add this to the apple and zucchini.
  5. Pour the wet ingredients into the dry ingredients and use a spatula to fold the ingredients together gently. Mixing until just combine, because if you mix to much the muffins will be heavy.
  6. Spoon mixture evenly into muffin cases.
  7. Bake for 20-25 minutes.
