Ingredients

  • 125 Grams Butter
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 Cup cooked Pumpkin pulp
  • 2/3 Cup Milk
  • 1 3/4 Cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger

Method

  1. Preheat oven to 180 degrees.
  2. Greases and flour the muffin trays.
  3. Melt butter and sugar together. Cool for 5 minutes.
  4. Add eggs, one at a time, beating well.
  5. Combine the pumpkin pulp with milk , add to the butter mix.
  6. Mix dry ingredients together and add to the butter and pumpkin mixture.
  7. 3/4 fill muffin trays with mixture.
  8. Bake for 20 minutes until cooked.
