	Ingredients
- 2 cups Flour
 - 2 tsp Baking powder
 - 1/2 cup Brown Sugar
 - 1 tsp Cinnamon
 - 1/4 tsp Nutmeg
 - Pinch of Cloves
 - 1 tsp Vanilla Essence
 - 1/2 cup Canola oil
 - 2 Eggs
 - 1 Apple
 - 1 Zucchini
 - Squeeze of Lemon juice
 
Method
- Preheat oven to 180°C. Line muffin tins with muffin cases and spray each case with cooking spray.
 - In a large bowl sift together flour, baking powder, brown sugar, cinnamon, nutmeg and cloves. Set this aside.
 - Cut the apple and remove the core. Grate both the apple and zucchini. Place in another bowl and add a squeeze of lemon to stop it turning brown
 - In another bowl whisk together the eggs, vanilla and oil. Add this to the apple and zucchini.
 - Pour the wet ingredients into the dry ingredients and use a spatula to fold the ingredients together gently. Mixing until just combine, because if you mix to much the muffins will be heavy.
 - Spoon mixture evenly into muffin cases.
 - Bake for 20-25 minutes.
