Whoops, I forgot to buy Ice Cream before lockdown and the kids aren’t pleased with me….
I did however buy a big bottle of cream and I was lucky enough to be given a big bag of homegrown peaches and passionfruit, so I suggested we could make our own. I used to make this recipe all the time – especially when fejioa are in season – so it was fun to give it a go again with the help of Eden. It can be a bit of a messy job, and you must make sure you beat your egg whites BEFORE you whip the cream (if you have even the smallest bit of cream left on your beaters the whites won’t form fluffy peaks), but it really is worth it for a treat.
