Ingredients

For the bug

  • 14g Yeast (Plain – not breadmaker yeast)
  • 1 teaspoon Sugar
  • 1 teaspoon ground Ginger
  • 1 cup cold Water

To feed the bug (every day)

  • 1 teaspoon Sugar
  • 1 teaspoon ground Ginger

For the beer

  • 4 Lemons
  • 2 cups Sugar
  • 5 cups boiling water
  • 14 cups cold water

Method

  1. To start the bug put the yeast, sugar, ginger and water into a clean dry glass jar.
  2. Feed the bug everyday for 7 days – 1 teaspoon of sugar and 1 teaspoon of ground ginger.
  3. After a week, juice the lemons and put the juice in a large bowl or pot with the sugar and the hot water.
  4. Stir until all the sugar has dissolved and then add the 14 cups of cold water.
  5. Strain the juice from the bug – do this through a piece of muslin cloth to catch any bits, and add this juice to the bowl.
  6. Stir this together then pour into bottles. Leave the lids off the bottle for at least 2 hrs before closing.
  7. Let the bottles in a cool dark place for 2 – 4 weeks while it matures. Serve cold.
