Ingredients
- 1 Bag of frozen peas
- 1 Cucumber
- 1 Red Capsicum
- 1 Iceberg lettuce
- Mint Dressing
- 1 clove garlic (optional)
- 1/2 teaspoon dried or fresh mint
- 6 tablespoon mayonnaise
- 1 1/2 teaspoon vinegar (either white wine vinegar or red wine vinegar)
Method
- Cook peas in a pot of boiling water for 1 minute, then drain and refresh under cold water.
- Place in a large bowl
- Dice cucumber, place in bowl with peas
- Finely dice capsicum, place in bowl with other ingredients
- Slice up lettuce
- Mix dressing ingredients together and add to salad bowl. Mix well.
