Rainbow Salad

Ingredients

  • 1 Bag of frozen peas
  • 1 Cucumber
  • 1 Red Capsicum
  • 1 Iceberg lettuce
  • Mint Dressing
  • 1 clove garlic (optional)
  • 1/2 teaspoon dried or fresh mint
  • 6 tablespoon mayonnaise
  • 1 1/2 teaspoon vinegar (either white wine vinegar or red wine vinegar)

Method

  1. Cook peas in a pot of boiling water for 1 minute, then drain and refresh under cold water.
  2. Place in a large bowl
  3. Dice cucumber, place in bowl with peas
  4. Finely dice capsicum, place in bowl with other ingredients
  5. Slice up lettuce
  6. Mix dressing ingredients together and add to salad bowl. Mix well.
