Ingredients
For the bug
- 14g Yeast (Plain – not breadmaker yeast)
- 1 teaspoon Sugar
- 1 teaspoon ground Ginger
- 1 cup cold Water
To feed the bug (every day)
- 1 teaspoon Sugar
- 1 teaspoon ground Ginger
For the beer
- 4 Lemons
- 2 cups Sugar
- 5 cups boiling water
- 14 cups cold water
Method
- To start the bug put the yeast, sugar, ginger and water into a clean dry glass jar.
- Feed the bug everyday for 7 days – 1 teaspoon of sugar and 1 teaspoon of ground ginger.
- After a week, juice the lemons and put the juice in a large bowl or pot with the sugar and the hot water.
- Stir until all the sugar has dissolved and then add the 14 cups of cold water.
- Strain the juice from the bug – do this through a piece of muslin cloth to catch any bits, and add this juice to the bowl.
- Stir this together then pour into bottles. Leave the lids off the bottle for at least 2 hrs before closing.
- Let the bottles in a cool dark place for 2 – 4 weeks while it matures. Serve cold.
