Creamy Coleslaw with Apple

Ingredients

  • 1/2 cup Mayonnaise
  • 1/2 Cabbage
  • 2 Carrots
  • 2 Apples
  • 2 Spring Onions
  • Parsley and Chives

Method

  1. Wash and thinly slice the cabbage. Put into a large bowl.
  2. Peel and grate the carrots. Add to the bowl.
  3. Don’t peel the apples. Cut them into 1/4, remove the core , slice thinly then cut them into thin battens.
  4. Thinly slice the spring onions and chop the herbs finely.
  5. Add this to the big bowl with the mayonnaise.
  6. Mix thoroughly and chill before serving.
