Ingredients
- 6 Carrots
- 3 Beetroot
- 6 Oranges
- 3 Tablespoons finely sliced Red Onion
- 3 Cups flat leaf Parsley
- 3 Tablespoons finely chopped Chives
- a handfull of Sunflower seends and Pumpkin seeds
DRESSING - 3 Tablespoons Honey
- 3 Tablespoons Apple Cider Vinegar
- 3 Teaspoon Mustard
- 2 Cloves Garlic finely chopped.
Method
- Peel and grate the carrots and beetroot.
- Peel and segment the oranges.
- Mix together all of the vegetables and orange. Throw the seeds into the mix.
- In a bowl, whisk together the honey, apple cider vinegar, mustard and garlic.
- Pour the dressing over the salad and toss together.
