Ingredients

  • 400g Silverbeet
  • Large handful of roughly chopped mixed herbs – parsley, coriander, mint, dill
  • 1½ teaspoons nutmeg
  • ½ teaspoon sugar
  • 3Tbsp flour
  • 2 cloves garlic
  • 2 eggs
  • 100 g feta cheese, crumbled
  • Salt and popper

Method

  1. Simmer Silverbeet for 5 minutes in boiling salted water.
  2. Drain and squeeze out the excess moisture.
  3. Place in a food processor with the chopped herbs, nutmeg, sugar, flour, garlic, eggs, salt and pepper. Blitz.
  4. Fold in feta cheese.
  5. Make the fritters with heaping tablespoons and cook for 3-4 minutes total in a lightly oiled frying pan. 6. Eat warm, with a teaspoon of chutney on the side.
