Ingredients
- 400g Silverbeet
- Large handful of roughly chopped mixed herbs – parsley, coriander, mint, dill
- 1½ teaspoons nutmeg
- ½ teaspoon sugar
- 3Tbsp flour
- 2 cloves garlic
- 2 eggs
- 100 g feta cheese, crumbled
- Salt and popper
Method
- Simmer Silverbeet for 5 minutes in boiling salted water.
- Drain and squeeze out the excess moisture.
- Place in a food processor with the chopped herbs, nutmeg, sugar, flour, garlic, eggs, salt and pepper. Blitz.
- Fold in feta cheese.
- Make the fritters with heaping tablespoons and cook for 3-4 minutes total in a lightly oiled frying pan. 6. Eat warm, with a teaspoon of chutney on the side.
