UDON NOODLE SALAD

Ingredients

  • 400g Udon Noodles
    5 Spring Onions
    2 sticks Celery
    3 Carrots
    Corriander
    Rocket
    Sesame Seeds
  • DRESSING
  • 3 tablespoons Sesame Oil
  • 3 teaspoons Sugar
  • 2 teaspoon Oil
  • 3 tablespoons Vinegar
  • 4 tablespoons Soy Sauce
  • 2 teaspoon minced Garlic
  • 2 tablespoon minced Ginger

Method

  1. Peel and thinly slice Carrots. Slice Spring onions and prepare coriander and rocket. Place in a large bowl with the udon noodles.
  2. Heat oil in a pan and add the ginger and garlic.
  3. Once fragrant, remove from heat and add soy sauce, vinegar, sesame oil and sugar.
  4. Pour this over the noodles and sprinkle with sesame seeds.
